One Pot Veggies

1 teaspoon walnut or olive oil

1 cup zucchini, sliced

1 cup broccoli, small florets

1 cup cauliflower, small florets

1/2     red pepper, chop in 1 inch pieces

1 small patty pan squash, quartered

2 tablespoons parsley or cilantro, finely diced

2 scallions, chopped

2 tablespoons Tomato Mint Chutney or
        favorite jarred vegetable chutney

Prep the first 5 ingredients and saute in olive oil in 12 inch skillet for 3-5 minutes.  Chop the next 2 ingredients, add to pan and saute for 1 additional minute.  Stir in chutney and heat for one minute.  Serve on its own or with a grain and protein as pictured.  Serves 4
